This has been a favorite in my family for generations.
Ingredients:
 
1 package ground turkey or beef (thawed)
1 package of 12 large white-corn tortillas
1/3 head of lettuce
mild cheddar cheese (not pre-shredded)
2 ripe tomatos
1 small can of sliced olives
1 ripe large avocado
vegetable oil
salt
1 small can fire-roasted green chilies
chopped onion
salsa or hot sauce (optional)
 
Directions:

First prepare the vegetables by shredding the lettuce with your hands. Grate the cheese. Cut the tomatos, onion, and avocado into small slices. Drain the can of olives. Arrange the lettuce, tomatos, avocado, cheese, onion, and olives on plates.
Next, heat a small or medium sized frying pan with vegetable oil in it. The vegetable oil should go about 3/4 inch high in the pan. After a few minutes of heating the oil, use tongs and place a tortilla in the pan to fry. Flip it over every 5-10 seconds, until it's as crisp as you like. Then place it on a plate with a paper towel on it. Repeat for all of the tortillas, and place a paper towel between each finished tortilla as you stack them on top of eachother on the plate. The paper towels will help to soak up the excess oil and keep the tortillas warm.
When about half of the tortillas are done, start cooking the turkey or beef mixed with the fire-roasted green chilies. Place it in a large frying pan, without oil. Cook over medium-high heat, and constantly break into pieces with a wooden spoon as you cook it. When there's no more pink pieces left, then it's done.
Now everyone can prepare their tacos, putting as much as they like of each of the toppings in it. Add a dash of salt to each taco or hot sauce, if desired.
